Limoncello

10 Lemons
1.75 Liter Vodka
7 Cups Water
5 Cups Sugar

With a sharp pairing knife peel the rind off of the lemons.  Make sure you only use the yellow part and remove any of the white pith,  In a 5 liter container combine the lemon rind and the 1.75 liter of vodka.  Store covered at room temperature for 2 weeks. 

Bring 7 cups of water to a boil and add 5 cups of sugar, stir until dissolved.  Add the sugar water (simple syrup) to the lemon / vodka mixture and chill over night.  Strain and enjoy...
